Simple Kale Caesar Salad

1 head of Curley Kale
1 head of Lacianto Kale (Dino Kale)
1/2 cup Extra-Virgin Olive Oil
1 Lemon
1 teaspoon of Dijon Mustard
5 slices of day old Bread
1/2 cup of freshly grated Parmigiano-Reggiano plus more for a nice garnish
Garlic Salt and Black Pepper
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
1. Cube 5 slices of bread and spray with cooking spray, sprinkle with garlic salt and bake
on a cookie pan for about 8min or until lightly browned.
2. Wash and dry 2 heads of Kale and remove stems, then cut into 1/4-inch strips.
3. In a measuring cup combine 1 cup of extra-virgin olive oil, Zest of 1 whole Lemon and its juice and 1/2 cup of freshly grated Parmigiano-Reggiano with a teaspoon of Dijon Mustard.
4. Combine all ingredients into a large bowl and stir, then add more freshly grated
Parmigiano-Reggiano and freshly ground black pepper for garnish and serve. Enjoy!!!
