Michael's One Pan Chicken 

6 Large Chicken Thighs, Bone-in Skin on
1 Large Yellow Onion, sliced
4 Large Garlic cloves, smashed
1 lb Baby Carrots
4 Limes
4 Tablespoons Cilantro, Chopped
4 Large Red Potatoes, Cubbed
5 Tablespoons Olive Oil
1/2 Teaspoon Paprika
1/2 Teaspoon Garlic Salt
1/2 Teaspoon Cumin
1/2 Teaspoon Curry Powder
Salt & Pepper

Sriracha Mayo Sauce

2 Tablespoons of Mayonnaise
1 Tablespoon of Sriracha

Combine both ingredients in a small mixing bowl until fully combined and ENJOY with this tasty chicken dinner.

DIRECTIONS:

1. Start by marinating chicken in a large Ziploc bag with onions, garlic, 3 tablespoons of oil, paprika, garlic salt, cumin, curry powder and pinch of salt & pepper. Let chicken marinate for at least 5 hours, overnight is highly recommended.

2. Preheat oven to 425 degrees. On a baking sheet combine carrots and potatoes with 2 tablespoons of oil and a pinch of salt & pepper and bake in oven for 10 mins. Then add chicken marinade to pan and spread evenly with potatoes & carrots, bake for 45-50 mins until chicken skin is golden brown and veggies start to darken on the edges.

3. Garnish with fresh cilantro, lime juice and serve with Sriracha mayo sauce and ENJOY !!!
