Lighter Mac n’ Cheese with Ham and Carrots

1lb Penne Pasta
6oz Ham, diced
1 Cup Carrots, diced
2 Cups of Colby Jack Cheese, shredded
4 Tablespoons Butter, unsalted
4 Tablespoons All Purpose Four
2 Cups of Milk
1 Teaspoon Olive Oil
1/8 Teaspoon fresh Nutmeg
Salt & Pepper

DIRECTIONS:

1. Start by preheating your oven to 425 degrees. In a large pot cook pasta according to package instructions in salted water.

2. In a medium pot heat oil then add carrots with a pinch of salt and pepper and sauté for 3 mins. Add butter to carrots and cook until melted, then stir in flour and cook for 2 mins. Slowly whisk in milk to mixture and bring to a slow boil before turning off heat. Add 1 3/4 cups of cheese to milk along with nutmeg, stir until fully combined adding more salt to taste.

3. Drain pasta and add to cheese mixture along with ham and place into a oven safe casserole dish garnishing with remaining 1/4 cups of cheese. Place dish in the oven on the middle rack and bake for 10-15 mins, then remove from oven. Let pasta cool down for 5 mins then serve and ENJOY !!!
