Roasted Red Onions with Thyme

4 Large Red Onions, Quartered with skins left on
5 Sprigs of Fresh Thyme
4 Tablespoons Extra-Virgin Olive Oil
2 Tablespoons Red Wine Vinegar
1 Tablespoon of Balsamic Vinegar
Salt & Pepper

DIRECTIONS:
1. Start by Preheating your oven to 425 degrees. In a large bowl gently combine cut onions with oil, thyme, red wine vinegar, salt & pepper until fully coated.
2. On a parchment lined baking sheet arrange onions cut sides up and roast in oven on the middle rack until onions are nice and browned about 25-30 mins, garnish with balsamic vinegar and a a few sprigs of fresh thyme and ENJOY !!!
